Turon
Turon is the snack that turns an overripe banana into something worth queuing for at a street cart — rolled in a spring roll wrapper, fried until crackling, and coated in caramelized sugar that hardens into a glassy shell.

Instructions
- Roll each banana half (with a few strips of jackfruit, if using) in brown sugar, coating well.
- Lay a spring roll wrapper on a flat surface. Place the sugared banana near one edge, fold the sides in, and roll tightly. Seal the edge with a little water.
- Heat oil in a pan over medium heat. Fry the rolls in batches, turning occasionally, for 3-4 minutes until golden brown.
- In the last minute of frying, sprinkle a little extra brown sugar into the oil around the rolls — it will caramelize and stick to the wrapper, creating a crisp glazed shell.
- Remove and drain on a wire rack (not paper towels, or the caramel will stick). Let cool slightly before serving.
Cook's Tip
Fry over medium heat, not high — the sugar caramelizes and burns fast, so a gentler heat gives the wrapper time to turn crisp before the coating scorches.
