Banana Cue

Banana Cue is street food at its simplest: whole saba bananas deep-fried and rolled in melted brown sugar until they’re glazed and sticky. Skewer them on bamboo sticks and eat them hot off the pan.

Instructions

  1. Heat oil in a pan over medium heat. Fry the bananas for 3-4 minutes, turning occasionally, until lightly golden.
  2. Sprinkle the brown sugar evenly into the oil around the bananas. Lower the heat slightly and let the sugar melt and caramelize, turning the bananas occasionally to coat them evenly.
  3. Continue cooking for 3-4 minutes until the sugar turns a deep amber and clings to the bananas in a glossy coat.
  4. Remove and skewer two bananas per bamboo stick. Let the caramel set for a minute before serving.

Cook's Tip

Use bananas that are ripe but still a little firm — overripe ones turn mushy in the hot oil before the sugar has time to caramelize properly.
