Instructions
- Soak the pancit canton noodles in warm water for a few minutes until slightly softened, then drain.
- Heat oil in a wok over medium-high heat. Saute garlic and onion until fragrant, then add pork and cook until browned.
- Add shrimp and cook until pink, about 2 minutes, then push everything to one side of the wok.
- Add carrots and cabbage, and stir-fry for 2-3 minutes until slightly tender-crisp.
- Pour in the broth, soy sauce, and oyster sauce, and bring to a simmer.
- Add the softened noodles and toss everything together, adding more broth as needed, until the noodles are cooked through and the sauce is absorbed, about 5 minutes.
- Season with salt and pepper, then serve hot with calamansi wedges.
Cook's Tip
Add the noodles to the wok while there's still a good amount of liquid, and let them finish cooking directly in the sauce rather than boiling them separately; this is how the noodles absorb flavor all the way through instead of just tasting coated on the outside.
