Instructions
- In a pot, heat oil and saute garlic and onion until fragrant. Add the chicken and cook until lightly browned on all sides.
- Pour in the broth and bring to a boil. Lower the heat, cover, and simmer for 20-25 minutes until the chicken is cooked through and tender.
- Remove the chicken, shred or dice the meat, discard the bones, and return the meat to the pot.
- Add the elbow macaroni and simmer for 8-10 minutes until just tender.
- Add carrots, celery, and hotdog slices, and cook for 3-4 minutes until the vegetables soften.
- Stir in the evaporated milk and cabbage, season with fish sauce, salt, and pepper, and simmer gently for another 3-5 minutes. Do not let it come to a hard boil once the milk is added.
- Serve hot.
Cook's Tip
Add the evaporated milk only at the very end and keep the heat low; boiling the soup hard after the milk goes in can cause it to curdle, breaking the creamy texture that makes sopas so comforting.
