Instructions
- Marinate the pork in soy sauce, vinegar, and garlic for at least 15 minutes.
- Heat oil in a pot over medium heat. Sauté onion and garlic until fragrant, then add the marinated pork (reserving the marinade) and cook until browned, about 5-7 minutes.
- Pour in the reserved marinade and tomato sauce along with the bay leaves. Bring to a boil, then lower heat, cover, and simmer for 30 minutes until the pork is tender.
- Add the potatoes and carrots, and simmer for 10 minutes until they begin to soften.
- Stir in the pork liver and bell pepper, and cook for 5 minutes more.
- Add the green peas, season with fish sauce, salt, and pepper to taste, and simmer for a final 3 minutes.
- Serve hot with steamed rice.
Cook's Tip
Add the liver last and cook it only briefly — liver toughens and turns chalky with prolonged heat, so stirring it in during the final few minutes keeps it soft and prevents it from overpowering the sauce.
