Pork Sinigang

Instructions
- In a large pot, combine the pork, water, onion, and tomatoes. Bring to a boil, then skim off any scum. Lower the heat and simmer, covered, for 40-45 minutes until the pork is tender.
- Stir in the tamarind soup base until dissolved, then add the radish and green chili. Simmer for 5 minutes.
- Add the string beans and cook for 3-4 minutes until just tender.
- Season with fish sauce to taste, then add the kangkong last and simmer just until wilted, about 1 minute.
- Serve immediately, piping hot, with steamed rice and extra fish sauce or calamansi on the side.
Cook's Tip
Add leafy greens like kangkong at the very last minute — they only need seconds to wilt, and overcooking turns them mushy and dull.
