Pancit Bihon
Pancit bihon is the noodle dish that shows up at every Filipino birthday and fiesta, said to bring long life to whoever eats it. Thin rice noodles are stir-fried with vegetables, chicken, and a savory soy-based sauce until every strand is coated.

Instructions
- Heat oil in a large wok over medium heat. Sauté garlic and onion until fragrant, then add the chicken and cook until no longer pink.
- Pour in the chicken broth, soy sauce, and fish sauce. Bring to a simmer and cook for 5 minutes.
- Add the carrot and cabbage, and cook for 2-3 minutes until just softened. Remove about 1 cup of the broth and vegetables and set aside.
- Add the drained bihon noodles directly to the pan, tossing to coat. Cook, stirring frequently, until the noodles absorb the liquid and turn tender, 5-8 minutes.
- Add the snow peas and toss for another minute. If the noodles look dry, add back some reserved broth. Serve hot with calamansi.
Cook's Tip
Don't soak the bihon too long — a quick 10-minute soak in warm water is enough. Oversoaked noodles turn mushy the moment they hit the pan.
