Banana Cue
Banana Cue is street food at its simplest: whole saba bananas deep-fried and rolled in melted brown sugar until they’re glazed and sticky. Skewer them on bamboo sticks and eat them hot off the pan.

Instructions
- Heat oil in a pan over medium heat. Fry the bananas for 3-4 minutes, turning occasionally, until lightly golden.
- Sprinkle the brown sugar evenly into the oil around the bananas. Lower the heat slightly and let the sugar melt and caramelize, turning the bananas occasionally to coat them evenly.
- Continue cooking for 3-4 minutes until the sugar turns a deep amber and clings to the bananas in a glossy coat.
- Remove and skewer two bananas per bamboo stick. Let the caramel set for a minute before serving.
Cook's Tip
Use bananas that are ripe but still a little firm — overripe ones turn mushy in the hot oil before the sugar has time to caramelize properly.
