Pork Menudo

Menudo is a Filipino tomato-based stew built around diced pork, liver, and a colorful medley of potatoes, carrots, and bell peppers. It’s a fixture at Filipino gatherings and fiestas, prized for its rich, slightly tangy sauce and tender chunks of meat. Serve it with steamed rice for a filling, crowd-pleasing meal.

Instructions

  1. Marinate the pork in soy sauce, vinegar, and garlic for at least 15 minutes.
  2. Heat oil in a pot over medium heat. Sauté onion and garlic until fragrant, then add the marinated pork (reserving the marinade) and cook until browned, about 5-7 minutes.
  3. Pour in the reserved marinade and tomato sauce along with the bay leaves. Bring to a boil, then lower heat, cover, and simmer for 30 minutes until the pork is tender.
  4. Add the potatoes and carrots, and simmer for 10 minutes until they begin to soften.
  5. Stir in the pork liver and bell pepper, and cook for 5 minutes more.
  6. Add the green peas, season with fish sauce, salt, and pepper to taste, and simmer for a final 3 minutes.
  7. Serve hot with steamed rice.

Cook's Tip

Add the liver last and cook it only briefly — liver toughens and turns chalky with prolonged heat, so stirring it in during the final few minutes keeps it soft and prevents it from overpowering the sauce.
