Pork Sinigang

Sinigang is the Philippines’ favorite sour soup, built on tamarind broth and loaded with vegetables and tender pork. It’s the dish most Filipinos crave on a rainy day — sour, savory, and endlessly comforting with a plate of rice.

Instructions

  1. In a large pot, combine the pork, water, onion, and tomatoes. Bring to a boil, then skim off any scum. Lower the heat and simmer, covered, for 40-45 minutes until the pork is tender.
  2. Stir in the tamarind soup base until dissolved, then add the radish and green chili. Simmer for 5 minutes.
  3. Add the string beans and cook for 3-4 minutes until just tender.
  4. Season with fish sauce to taste, then add the kangkong last and simmer just until wilted, about 1 minute.
  5. Serve immediately, piping hot, with steamed rice and extra fish sauce or calamansi on the side.

Cook's Tip

Add leafy greens like kangkong at the very last minute — they only need seconds to wilt, and overcooking turns them mushy and dull.
