Sopas (Filipino Chicken Macaroni Soup)

Sopas is the Filipino take on chicken noodle soup, built on a milky broth studded with elbow macaroni, shredded chicken, and diced vegetables. It’s the dish every Filipino household reaches for on a rainy day or when someone’s feeling under the weather, simple to make and endlessly comforting.

Instructions

  1. In a pot, heat oil and saute garlic and onion until fragrant. Add the chicken and cook until lightly browned on all sides.
  2. Pour in the broth and bring to a boil. Lower the heat, cover, and simmer for 20-25 minutes until the chicken is cooked through and tender.
  3. Remove the chicken, shred or dice the meat, discard the bones, and return the meat to the pot.
  4. Add the elbow macaroni and simmer for 8-10 minutes until just tender.
  5. Add carrots, celery, and hotdog slices, and cook for 3-4 minutes until the vegetables soften.
  6. Stir in the evaporated milk and cabbage, season with fish sauce, salt, and pepper, and simmer gently for another 3-5 minutes. Do not let it come to a hard boil once the milk is added.
  7. Serve hot.

Cook's Tip

Add the evaporated milk only at the very end and keep the heat low; boiling the soup hard after the milk goes in can cause it to curdle, breaking the creamy texture that makes sopas so comforting.
